MOCAF
Modified Cassava Flour
Mocaf (Modified Cassava Flour) is a type of flour that is made from the root of the cassava plant, also known as yucca or manioc. It is a staple food in many parts of the world, particularly in Africa, South America, and Southeast Asia. The cassava root is peeled, washed, grated, and then treated with a process called "wet fermentation" to remove the toxic compounds present in the raw root. After fermentation, the cassava is dried, milled and sifted to produce a fine powder, which is known as modified cassava flour or mocaf.

Mocaf is a versatile ingredient that can be used in a wide range of food products, including bread, noodles, and pastries. It is also a gluten-free alternative to wheat flour, making it suitable for people with celiac disease or gluten intolerance. Mocaf also has a high nutritional value and high in dietary fiber and carbohydrates. It is also a good source of energy, vitamins, and minerals, making it an ideal ingredient for food products targeted at children and other nutritionally vulnerable groups.
