Modified Cassava Flour

Mocaf (Modified Cassava Flour) is a type of flour that is made from the root of the cassava plant, also known as yucca or manioc. It is a staple food in many parts of the world, particularly in Africa, South America, and Southeast Asia. The cassava root is peeled, washed, grated, and then treated with a process called "wet fermentation" to remove the toxic compounds present in the raw root. After fermentation, the cassava is dried, milled and sifted to produce a fine powder, which is known as modified cassava flour or mocaf.
